Brown Butternut Apple Soup

40 minIts finally fall and the season of soups! Daniela's fave fall soup is easy to make and a decedent rich treat to enjoy with a crusty piece of bread on a cold evening.

A nutty twist on a classic - Brown Butternut Apple Soup

Serves 6 people

Ingredients

1 large butternut squash peeled and chopped

1/2 cup butter

1 large onion chopped

2-3 sweet apples chopped

3-5 celery stalks chopped

2-3 cloves garlic

Fresh thyme

5 cups broth (vegetable or chicken work best)

Drizzle of cream or coconut cream for serving

Pumpkin seeds or crusty bread for serving

Steps

1. Add your butter to a heavy bottomed pot and and allow to melt on medium -high and come to a bubble until it gets foamy and starts to turn brown.

2. Once butter is brown turn down to medium and add your onion, celery, garlic, apples, squash and fresh thyme, stirring and allowing the vegetables to caramelize season with salt and pepper.

3. Once softened you can add the broth and allow to simmer until everything is cooked through and soft- about 30 -40 minutes.

4. Once cooked through turn off the heat and you can add to a blender in batches or you can use a hand immersion blender to blend it until smooth.

Serve with a drizzle of cream or coconut cream and top with pumpkin seeds or a big piece of crusty bread and Enjoy!
