Make-Ahead French Toast Bake

This baked french toast recipe can be prepared a day in advance and freezes really well for leftovers! Adding your favorite fruits increases the fiber, and the sugar can be swapped out for diabetic friendly sweeteners if needed.

  • 1 loaf of bread of choice (sandwich bread or loaf sliced to 1-inch)
  • 1/2 cup of butter
  • 7 eggs
  • 2 cups milk
  • 2 tbsp vanilla extract
  • 2 tbsp granulated sugar
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Toppings:

  • Fruit of your choice - banana, apples, berries, etc.
  • Maple syrup
  • Icing sugar for dusting

Steps

  1. Melt butter & pour into 9x13 baking dish (tilt to cover sides)
  2. In a large bowl, whisk together eggs, milk, cinnamon, sugar, salt, vanilla, nutmeg
  3. Arrange bread slices in baking dish (you may have more than 1 layer, that's ok)
  4. Pour wet mixture over the bread - lifting the layered pieces if needed to ensure all the bread is covered.
  5. Cover and refrigerate overnight (or for at least an hour)
  6. Preheat oven to 350
  7. Bake until golden brown - about 35-45 minutes.
  8. Add toppings and serve
