Winter Squash Soup

Full of flavor and packed with vitamins and fiber, this butternut squash soup is comforting and healthy! It's great to warm up on cool days and can be frozen for up to a few months. Top with pumpkin seeds or herbs, a decadent swirl of cream, and serve with a crusty roll!

Ingredients

  • 1 large butternut squash
  • 2 tbsp of olive oil
  • 1 small sweet onion, chopped
  • 1 medium carrot, chopped
  • 1 tsp of salt (or more to taste)
  • 4 garlic cloves, minced
  • 1 tbsp maple syrup
  • 1 tbsp fresh sage, chopped
  • 4 cups of chicken stock (or less, depending on the desired consistency of the soup)
  • Freshly ground black pepper to taste

Steps

  1. Heat oil in a large pot over medium heat. Add onion, pepper, salt, and squash and cook until squash is softened - about 10 minutes.
  2. Add garlic and sage and stir for 1 minute.
  3. Add enough broth to cover the vegetables and simmer for 25-30 minutes.
  4. Pour soup and maple syrup into a blender, or use an immersion blender to blend until smooth.
  5. Add an additional cup of broth (or more) until you reach your desired consistency.
  6. Season to taste and enjoy!
