Meatloaf

This recipe is from our friends at Windsor Park Retirement Community. Not only have they submitted this tasty recipe, they have also donated to our C.A.R.E.S. Grant!

My meatloaf recipe is a delicious blend of tender meat, savory spices, and a touch of love in every bite. This classic comfort food is easy to prepare and pairs perfectly with mashed potatoes, roasted veggies, or your favorite sides. It’s a crowd-pleaser for family dinners or a cozy night in.

Total time

1 hour

Servings

Serves 4 - 6 people

Ingredients

1 lb. ground beef

1 small onion finely chopped.

2 cloves garlic, minced.

1 large egg

1/4 cup ketchup

2 tbsp Worcestershire sauce

1 tsp dried thyme or Italian seasoning

Salt and pepper, to taste

Steps

1. Preheat oven: Preheat your oven to 350°F (175°C).

2. Prepare the meat mixture: In a large bowl, combine the ground beef, chopped onion, minced garlic, egg, 1/4 cup ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined (don’t overwork the meat).

3. Shape the meatloaf: Transfer the mixture to a baking dish or a lined loaf pan and form it into a loaf shape.

4. Add topping: In a small bowl, mix the remaining 1/4 cup ketchup with the optional brown sugar (or you can just use plain ketchup). Spread this mixture evenly over the top of the meatloaf.

5. Bake: Bake the meatloaf in the preheated oven for 45-55 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).

6. Rest and serve: Let the meatloaf rest for 10 minutes before slicing. This helps it set and makes for easier cutting.

7. Serve with mushroom gravy, Mashed potato and the choice of vegetables.
