Strawberry Rhubarb Crisp

Strawberry season is here! We're thrilled to share this strawberry rhubarb crisp - equal parts comforting and summery. This crisp can be put together quickly and is great as a breakfast treat or a dessert! Serve with whipped cream or vanilla ice cream to make it extra decadent. Decrease the sugar, or replace it with an alternative to suit different diets.

Ingredients

Filling Ingredients:

  • 4 cups rhubarb (cut in 1-inch pieces)
  • 3 cups strawberries (sliced)
  • 1 cup white sugar
  • 2 tbls cornstarch
  • 2 tsp fresh lime juice
  • 1.5 tsp vanilla extract

Topping Ingredients:

  • 1 1/4 cups butter
  • 1 1/2 cups brown sugar
  • 1 1/2 cups flour
  • 1 1/4 cups rolled oats
  • Pinch of salt

Steps

  1. Preheat oven to 350 degrees F.
  2. Add rhubarb & strawberries to a bowl with the white sugar and mix to coat fruit with sugar. Let stand for 10-15 minutes.
  3. Using a slotted spoon, add fruit mixture to a 9x13 baking dish. Add cornstarch, lime juice and vanilla, mix well.
  4. Combine all topping ingredients in a mixing bowl, mix the ingredients together with a wooden spoon or your hands until crumbs form.
  5. Add topping over the fruit filling.
  6. Bake for 45-60 minutes until the fruit filling is bubbling and the topping is browned.
  7. Serve warm with whipped cream, ice cream, or as is!
