1 small package mixed greens (142 g)
1/2 pint of blueberries
2 green onions, chopped on the diagonal
1 colored pepper, diced
½ cup walnuts, chopped
½ cup goat's cheese, optional
Dressing
1 tbsp Dijon mustard
1 tbsp balsamic vinegar
1 tbsp maple syrup
1/2 clove garlic, minced
2 tbsp olive oil
1. Mix dressing ingredients and set aside.
2. Make a bed of mixed greens in your bowl.
3. Prepare your blueberries, peppers, green onions and walnuts.
4. Distribute these ingredients nicely over top of the mixed greens.
5. Finish off the salad by adding little dollops of goat’s cheese!
Serve salad with dressing on the side so that your guests can drizzle as much or as little dressing as they like!
